grilled portobello salad

Ingredients

2 portobello mushrooms
4-5 big handfuls of arugula
1/4 C toasted walnuts
1/2 C blackberries

Dressing

2 tbsp diced red onion
3 sprigs fresh thyme ( stems removed )
3 tbsp balsamic vinegar
2 tsp avocado oil
3 tbsp fresh orange juice
pinch of salt + pepper

**makes 2 servings

Instruction

  1. Start by adding all dressing ingredients to a bowl and gently whisk until combined. Set aside.

  2. Remove stems and chop the mushrooms into chunks, add to a bowl and pour half the dressing over top. Let sit for about 10 minutes to marinate.

  3. Using a grill or frying pan, sear the mushrooms for about 3-4 minutes on each side or until you start to see grill marks develop.

  4. To assemble grab two plates and add a few handfuls of fresh arugula to each. Place the grilled mushrooms on top and add the walnuts, blackberries and remaining dressing. Serve immediately.
