If you know me, you know I am pretty much potato obsessed. This recipe has been one of my favourites for quite a while now and is always my go-to when I need a quick and simple plant based side dish. Par boiled and slow roasted in fresh garlic and rosemary. Bake some up for dinner or as a snack, they come out of the oven crispy and delicious every time!
