roasted garlic + herb croutons

Ingredients

1 loaf crusty bread
1/4 C finely chopped parsley
1 whole roasted garlic bulb
1/2 tsp sea salt
1/2 tsp pepper
1/4 C olive oil

**makes 4-5 cups

Instruction

  1. Pre heat oven to 375F.

  2. Cut the top the of the garlic bulb off to expose the cloves, drizzle with olive oil and sprinkle lightly with salt + pepper. Wrap the bulb in tin foil and place on a baking sheet. Bake for 35 - 40 minutes until soft and caramelized. Remove and let cool.

  3. Slice the loaf of bread into bite sized cubes.

  4. Using your hands squeeze the cooled, roasted garlic out of the skin. Add roasted garlic, 1/4 C olive oil, salt + pepper, and chopped parsley to a bowl and whisk until combined.

  5. Lightly toss the bread cubes in a large bowl with the garlic and olive oil mixture until all cubes are evenly coated.

  6. Place on a parchment lined baking sheet. Be sure to evenly spread the cubes out in a thin layer so each one gets a chance to crisp up.

  7. Bake at 350F for about 10 minutes. Remove and carefully toss. Bake for another 5 - 10 minutes depending on how crispy you like your croutons.

Remove from oven, let cool and store in an air tight container for up to two weeks.
