beetroot hummus

**makes approx 2 cups

Ingredients

1 19oz can chick peas ( drained + rinsed )
1 C cooked + peeled beets
2 garlic cloves
2 tbsp tahini
1/4 C lemon juice
2 tbsp water
1 tsp salt
1 tsp pepper

A bright and beautiful hummus, packed with fresh unique beet flavour. Created with just a handful of healthy, affordable ingredients it is the perfect dip for a veggie platter or colourful spread on sandwiches and wraps.

Add chickpeas, beets, garlic cloves, tahini, lemon juice, s+p and water to a food processor or high powered blender.

Blend until smooth, stopping to scrape the edges of the bowl as you go. Mine took about 3-4 minutes. If the hummus is too thick add one tsp of water at a time until you reach your preferred consistency.

Serve immediately or store in the fridge for up to a week.
