banana bread

**makes one loaf

Ingredients

5 ripe bananas
1/4 C unsweetened almond milk
1/2 tsp apple cider vinegar
1/2 C melted vegan butter
1 C brown sugar
1 tbsp vanilla extract
2 C all purpose flour
1 tsp baking powder
1/4 tsp salt
1 tsp baking soda
1 tsp cinnamon
3/4 C chopped walnuts

Preheat oven to 350F and line a loaf pan with parchment paper.

Mash the bananas in a bowl with a fork until smooth. Stir the melted butter, almond milk, vanilla, apple cider vinegar and brown sugar into the banana mixture until smooth. Set aside.

In a separate bowl combine the flour, baking powder, baking soda, cinnamon, walnuts and salt. Add the dry ingredients to the wet and gently fold over with a spatula until just combined. The less mixing the better.

Pour into prepared loaf pan and top with oats and walnut pieces (optional).

Bake for 40 minutes, remove and cover with foil. Bake for another 20 minutes. Check to see if it’s ready by inserting a toothpick. If it comes out clean its done. Remove from oven and let cool on a wire rack.

Serve warm and generously drizzle with melted chocolate.
