butternut squash pasta
**makes 4-6 servings
Ingredients
1 peeled + cubed butternut squash
1 lb pasta of your choice ( I used rotini )
1 tbsp olive oil
1 onion diced
3 fresh sage leaves
salt + pepper to taste
1 minced garlic clove
3 1/2 C water
Try this super easy and nutritious creamy butternut squash pasta dish. Butternut squash and fresh sage create the perfect combination of sweet and savoury. All you need to enjoy is a glass of wine and a fork!
Add the onion to a medium sized pot along with the sage leaves and some salt + pepper to taste. SautΓ© on medium to low heat for 5 minutes.
Now add the butternut squash, garlic, and water to the onion and sage mixture. Stir, and simmer on low for 20-25 minutes until the squash is tender. During this time you can start cooking the pasta.
Transfer the cooked butternut squash mixture to a blender. I did two batches because I have a smaller blender. Puree until super smooth and silky.
Finally, add the butternut squash mixture to your cooked pasta, give it a stir and it's ready.
Garnish with fresh arugula ( optional ). Also great as a leftover meal.
