peanut butter granola
Ingredients
2 C rolled oats
1/4 C flax seed
1/4 C unsweetened shredded coconut ( optional )
2 tbsp ground wheat germ
4 tbsp natural peanut butter
1 tsp pure vanilla extract
5 tbsp real maple syrup
**makes 2 - 3 cups
This super easy, healthy granola can be used as a topper for smoothie bowls or as an everyday breakfast cereal.
Add the peanut butter, maple syrup and vanilla extract to a microwave safe dish and heat for 30 seconds on low. Stir until combined and mixture is creamy. Set aside
Measure out the dry ingredients ( rolled oats, flax seed, shredded coconut, and wheat germ ) into a large mixing bowl. To the dry ingredients add the peanut butter mixture stirring until you have a crumbly mixture. Spread an even layer onto a parchment lined baking sheet and bake at 325F for 15 - 20 minutes.
Serve while warm or transfer to a container with a tight lid and store until you're ready to use.
