tossed avocado spring salad
**makes 2-3 servings
Ingredients
1 chopped romaine heart
2 handfuls arugula
1/4 C sliced radish
1/4 C cherry tomatoes halved
1/4 C chopped green onion
1/4 C diced cucumber
1/4 C chopped cilantro
lime wheels for garnish
Dressing
1 tsp cracked black pepper
1/2 tsp sea salt
1 ripe avocado
juice of 1 lemon
1 tsp balsamic vinegar
This guilt free, creamy, spring salad is so easy to make and the perfect pair for an energizing lunch or dinner. Try it with some crusty french bread or a nice warm bowl of soup.
In a bowl add the avocado, lemon juice, sea salt, pepper, and balsamic vinegar. Use a fork to mash everything together into a fairly smooth dressing. Set aside.
Add the radish, cherry tomatoes, green onion, cucumber, cilantro, romaine and arugula to a large bowl. Mix in the dressing, and give it a good toss with tongs until the salad has been fully coated.
Top with fresh lime wheels and serve immediately.
